Super Awesome Recipe From Beauty+The Feast


Hello lovely My Billie readers! I’m Allie and you can find me writing/eating over at beauty & the
feast. There, I share a bevy of things that are currently inspiring me and of course, my latest
favorite feasts. As a 20-something new to this little thing called the real world, many of my favorite
recipes are quick and easy to put together after a long day at work. So without further adieu, here is one of my most recent concoctions, perfectly light for summer: Veggie Macaroni!

Ingredients:
Macaroni
Zucchini [chopped]
Onion [chopped]
Garlic [crushed]
Olive Oil
Ricotta
Red Pepper Flakes [optional]

First, boil water. Add macaroni and cook for about seven minutes until al dente. Strain the macaroni, place back into the pot and set aside. In a medium skillet, add two tablespoons of olive oil and crushed garlic and heat on medium heat. Next, add chopped zucchini and onion to the olive oil and garlic mixture. Sautee until vegetables are soft. Add half a cup of ricotta to the macaroni and stir in vegetables and salt and pepper to taste. If you want to add a little kick, sprinkle in red pepper flakes [remember: a little bit goes a long way].

yum!!! i love macaroni - and the zuchini and onion in this are my two favorite veggies! would be good with goat cheese too!
